The Haddock
From New England comes a fine-flavoured, all-purpose fish - haddock - with a history that goes back to the 13 colonies. It is mild and slightly chewy and comes in drawn or fillet form; small-haddock is also available under the name "scrod" and is very tender. Haddock, like cod, can be bought frozen almost anywhere in the United States.
